I have just recently started learning how to fish soft baits. What is the advantage/disadvantage between texas rigs and carolina rigs? Are there times to use one over the other?

To some degree its personal preference. However, there are considerations. In heavy cover the texas rig is better as it goes through cover better. It also is the clear choice for flippin and pitchin. I prefer the Carolina Rig for casting and covering structure in open water. Hope this helps.
